Breakfast Raspberry Yogurt Fool


  • 2 cups EasiYo Greek Style Raspberry yogurt
  • ½ cup Crème fraiche
  • 2 cups frozen mixed berries
  • ½ cup water
  • 2-3 tbsp sugar
  • 1 tbsp cornflour, diluted in little water
  • Squeeze lemon
  • 1 tbsp butter
  • 1 tbsp honey
  • 1/4 tsp cinnamon
  • ½ cup muesli
  • 1 tbsp chia seeds
  • 1/4 cup chopped almonds
  • Fresh berries to decorate the top



Whisk together the yogurt and crème fraiche.  


Put berries, water and sugar in a saucepan and gently bring to the boil.  Stir in the cornflour and water, mix and cook until thickened.  Pour into a container and cover. Allow to cool before refrigerating.


Put butter and honey into a saucepan and heat until melted.  Stir in the remaining ingredients.  Spread out onto baking parchment and bake at 160°C until golden and crisp.  Store in an airtight container.


Layer the yogurt and berry mixture by spooning into the glasses alternately.  Top with muesli clusters and fresh berries.  Serve.
