Yogurt Coated Breakfast Bars

Ingredients

Breakfast Bars

  • 2 cups rolled oats
  • ½ cup shredded coconut
  • ½ cup pumpkin seeds
  • ½ cup sliced almonds
  • ½ cup sesame seeds
  • ½ cup dried apricots, diced
  • Pinch of salt
  • ¼ cup coconut oil
  • ½ cup peanut butter
  • ½ cup honey

Yogurt Coating

  • ½ cup EasiYo Vanilla Yogurt
  • 2 Tbsp icing sugar
  • ¼ cup coconut oil, melted

Method

Line a baking tin 20 x 30cm.

In a large bowl, combine all dry ingredients and mix well.

Melt together coconut oil, peanut butter and honey in small saucepan on a low heat for 1-2 minutes. Add honey mixture into dry ingredients and mix well.

Pour mixture into prepared tin and press down firmly using the back of a measuring cup, until it is tightly packed. Cover and place in the freezer for 1 hour before removing to slice into bars and then return to the freezer.

To make yogurt coating, combine yogurt and icing sugar and mix well. Add coconut oil and mix until just combined. Remove bars from the freezer and drizzle with yogurt mixture. Return to the freezer to firm up for 30 minutes before serving.

Store bars in the fridge in an air tight container for up to 1 week.

You can use any EasiYo Yogurt flavours for these breakfast bars!
