Spinach Salad with French Dressing

Serves 4

Salad Ingredients

  • 2 bunches spinach, washed and trimmed
  • ½ cup sliced sun-dried tomatoes
  • 1 cup halved cherry tomatoes
  • 1½ cups croutons
  • ½ -1 cup yogurt french dressing
  • ¼ cup shaved parmesan cheese

Yogurt French Dressing Ingredients

  • 1 cup Greek Style Unsweetened Yogurt
  • 1 tsp french mustard
  • 4 Tbsp light olive oil
  • 2 Tbsp lemon juice
  • salt and freshly ground pepper

Method

To make the yogurt dressing, place all the ingredients in a jar with a screw-top lid. Shake until thoroughly blended. Taste and adjust the seasonings if necessary. Alternatively, place ingredients in a bowl and stir or whisk until well combined.

To make the salad, tear the spinach into bite-size pieces. Place the spinach, tomatoes and croutons in a salad bowl. Spoon over the dressing and gently toss to coat leaves. Sprinkle with the parmesan cheese and serve immediately.

 

VARIATIONS

  • For Garlic and Yogurt French Dressing add 1-2 peeled and crushed garlic cloves.
  • For Fresh Herb Yogurt French Dressing, add 2-4 tablespoons finely chopped fresh herbs
